Char Siu Bao

Ingredients:
1 cup char siu (minced)
1 stalk green onions or 1 bunch Chinese parsley (minced)
1 Tbsp brown sugar
1 tsp oyster sauce
1 ½ tsp shoyu
1 can buttermilk biscuits

Combine all ingredients except biscuits.
Heat and blend well.
Cool and set aside.
Cut wax paper into 3 x 3” squares.
Lightly oil your hands.
Flatten two biscuits together and lightly drizzle with sugar on both sides.
Place 1 Tbsp of filling in the center of the biscuit.
Gather the edges of the dough forming pleats on the top.
Twist and secure together.
Set bun on wax paper.
Steam for 10-15 minutes.

Manapua

Roast Pork Bao Ingredients:
1 yeast cake (1 Tbsp yeast)
1 cup milk
5 ½ cups flour
¾ cup sugar
1 tsp salt
¼ cup salad oil
¾ cup water

Dissolve yeast in lukewarm water ‘till frothy.
Add the rest of the ingredients, including the flour a small amount at a time, until well mixed.
Cover tightly and allow to double in bulk. Divide into 36 small balls.
Fill with meat, place on a 2” square of waxed paper, oil the top and allow to rise again until smooth.
Steam 17 minutes.

Cantonese Roast Pork Ingredients:
1 ½ lbs pork roast

Bake roast until well done.
Cool, shred, and clean.
Marinate in the following until well seasoned.
5 Tbsp soy sauce
2 Tbsp sugar
1 Tbsp Hoisin sauce
minced fresh ginger, to taste
minced green onion, to taste

Be sure to drain the meat mixture thoroughly before filling the buns.

Onion Cheese Bread

Ingredients:
1 loaf French bread, uncut
½ cup finely chopped onion
½ cup grated parmesan cheese
1 cup mayonnaise

Combine onion, cheese, and mayonnaise. Mix well.
Slice bread in half lengthwise.
Lay halves on cookie sheet, cut sides up.
Spread with mixture.
Bake at 350 for 30 minutes or ‘till light brown.
Cut in crosswise slices.

Orange Rolls

Ingredients:
1 Tbsp yeast
¼ cup lukewarm water
½ tsp salt
¼ cup sugar
½ cup butter, melted
2 eggs, beaten
3-4 cups flour

Dissolve yeast in water.
Combine remaining ingredients except flour. Do not over-mix.
Add flour slowly until dough pulls away from the sides of the bowl. Do not over- mix.
Let rise until double.
Roll out into a large circle and spread with the zest of a large orange combined with sugar and butter.
Roll the dough up and cut into 12 rolls.
Place cut side up in a cupcake pan. Let rise.
Bake at 400 for 12-15 minutes until lightly browned.
Glaze with a mixture of orange juice and powdered sugar.
